Acai Berry Pâtes de Fruits

Commissioned to make a special acai berry item, pastry chef Montinaro created these fruit forward moist jellies. The greatest amount of sweetness was in the dusting of granular sugar on top of the pâtes de fruits, the gelatinous body itself almost like a subtle blend of blackcurrant and pomegranate. These would no doubt be lovely on a mignardise tray, although its wow factor would likely be that they’re made from those healthful berries.
